Dining in Rome
TAC Thin and Crunchy Rome: Caesar Salad Pizza and Crispy Starters
TAC Thin and Crunchy brings a fresh, playful energy to Roman pizza night, anchored by a Caesar salad pizza topping that makes greens genuinely exciting.

Turning a Caesar salad into a pizza topping sounds like an unexpected gamble, but the Valeria in Vegas at TAC Thin and Crunchy makes an immediate case for itself. The paper-thin crust arrives piled high with fresh salad greens, parmesan flakes, juicy chicken, bacon powder, and a white drizzle, proving that salad on pizza can be genuinely exciting.
Tucked away along Via Fiume delle Perle in Rome, this neighborhood pizzeria builds its identity around ultra-crisp crusts and creative toppings. We were welcomed by Valeria and the team to see how far their kitchen pushes the traditional pizzeria format.
Is TAC Thin and Crunchy worth adding to your itinerary?
The main event emerged straight from the pizzeria's dome-shaped oven, tiled in vibrant teal mosaic with Thin and Crunchy lettered across the top. The Valeria in Vegas pizza translates the familiar components of a Caesar salad onto a light, crunchy crust, balancing the warmth of the base with crisp greens, white drizzle, green sauce, and crunchy crumbs.

Crispy Starters and a Citrus Soda
We began our table spread with a pair of fried starters alongside a fizzy lemon drink. Pouring a yellow glass bottle of Tassoni Cedrata Soda into an ice glass with a lemon slice provided a bright, refreshing pairing as the first plates arrived.
The fried starters established a playful tone before any pizza reached our table. Golden croquettes of crispy supplì pulled open to reveal a melted cheesy core bound with red sauce, while a layered croque monsieur sandwich delivered crunch alongside melted cheese and a fine dusting of grated cheese across the top.

Lifting a slice confirms why this combination works so well: the crust stays sturdy and crisp under the generous salad toppings, making it my favourite way to eat greens. Between the fried starters, the signature salad pie, and a second thin-crust pizza topped with red sauce and white cheese, there was no room left for dessert, but every bite proved memorable.
