Wrapping cold frozen yoghurt into a paper-thin sheet of soft mochi is a race against time, but the fun is in building it yourself. At Yozo in Brisbane, the drawcard is taking dessert into your own hands, starting with a custom froyo mochi ball that requires equal parts enthusiasm and speed.

I picked out a flat white mochi sheet, loaded it with frozen yoghurt and crushed toppings, and carefully folded it into a soft bundle. The temptation is to stack as much as possible inside, but because cold yoghurt starts softening immediately, my first bite sent melting froyo bursting right out over my hands. It is gloriously messy, and my advice is simple: eat it much faster than I did.
