Brisket & Briyani delivers an energetic Saturday night pop-up in Sunnybank, pairing comforting wrapped-pot biryani and smoky brisket with addictive crunchy chicken and a crisp sparkling yuzu matcha.

You can smell the rich biryani aroma the moment you arrive at 105 Station Road in Sunnybank. The star of the outdoor food trailer setup is hard to miss: a massive pot of chicken biryani wrapped snugly in a pink blanket so the rice stays piping hot while soaking up deep, fragrant spices. Having missed out on a previous late visit when popular items sold out, arriving before the 5 pm opening was key to seeing the entire lineup.
Grabbing a seat at the outdoor tables as a queue begins forming behind the trailer, the early start quickly pays off with a table packed with hot dishes and freshly prepared drinks.

To drink, the iced sparkling yuzu matcha provides a bright contrast to the hearty meal. Layered in clear cups over ice, yellow yuzu syrup is topped with sparkling water and a pour of vivid green matcha, delivering an immediate citrus zing.

Smoked Meats and Golden Crunchy Chicken
We returned specifically for the side of crunchy chicken, which lives up to its name with a golden, deep-fried coating that is exceptionally crisp. Beside it, the side of smoked brisket is served tender and smoky, while white clam shell takeout containers hold generous portions of warm chicken biryani rice enjoyed straight with a fork.
To round out the savoury feeds, the loaded snack pack delivers a tray of chippies topped with slow-cooked pulled pork and drizzled with creamy white sauce.
Sparkling Yuzu Matcha and Slow-Brewed Chai
To drink, the iced sparkling yuzu matcha provides a bright contrast to the hearty meal. Layered in clear cups over ice, yellow yuzu syrup is topped with sparkling water and a pour of vivid green matcha, delivering an immediate citrus zing.
For a warm finish, the hot South Indian Chai is slow-brewed in a Goldair urn dispenser before being poured into paper cups. As it settles, a thin skin forms along the inner rim, a comforting sign of a rich, slow-brewed chai.
