Starting with a cheeseburger upgraded to sliced brisket, smothered in cheddar cheese and melted cheese sauce, makes an immediate case for low-and-slow barbecue at Robina Town Centre. The soft bun gives way to tender meat stacked with pickles and dripping sauce, proving right away that upgrading from a standard patty is well worth it.
Located at Shop 2039 in Robina, Brisket's is a family-owned spot bringing Texas-style barbecue straight into the shopping centre strip. Right behind the order and collect counter, a large orange and black commercial smoker runs in the kitchen, filling display trays with dark, heavily seasoned smoked cuts.

Beyond the meats, everything from the sauces to the side dishes is made fresh in-house. The mac and cheese easily became one of my personal favourites of the visit, served hot in a branded tray with a light dust of red spice seasoning over the creamy pasta.

Low-and-Slow Smoking in the Pit
All the meats here are smoked in-house rather than pre-cooked. Co-owner Stevie, who originally hails from America and now calls Australia home, walks through the kitchen's low-and-slow smoking routine. The Boston butt stays in the smoker for about 12 to 14 hours depending on the size of the cut, while the brisket spends up to 16 hours in the smoker to achieve its tender texture.
To sample the lineup, I ordered the basket platter. While a standard order comes with two meats, I tried all three to get the complete experience. The tray arrives stacked with waffle fries, toast, pickles, and three cuts paired with house-made sauces: pulled pork with gold barbecue sauce, chicken with white barbecue sauce, and brisket with red barbecue sauce.
