Pulling apart a freshly grilled toasted sandwich and watching melted cheddar and mozzarella stretch into golden, gooey strings is the ultimate start to a food court lunch. That long, satisfying cheese pull immediately sets a playful, comforting tone for my visit to Melt Brothers.
Located in the Level E food court at Uptown Brisbane on Queen Street, the setup makes its presence known long before you arrive at the counter. Graphic wall art along the stairwell features text advertising gourmet toasties, espresso, thickshakes, smoothies, and breaky or lunch options. Above the main counter, bold yellow ceiling lettering spells out Melt Brothers, complemented by signs highlighting gourmet toasties, espresso, and gems. Playful bread illustrations and wall slogans like 'It ain't easy being cheesy' lead towards a bright neon sign marking the spot to pick up cheesy goodness.

To make it a complete meal, I turned the toastie into a combo with a side and a cold drink. The serving tray comes loaded with the halved toasted sandwich sitting right beside a cup filled with hot, seasoned chippies.

The main draw for this visit was the BBQ Bandit, a fresh addition to the toasted sandwich menu packed with rich, indulgent fillings. Pressed between two golden-brown, crispy slices of toasted bread, the sandwich layers melted cheddar and mozzarella cheese alongside savoury maple bacon and crispy onion rings.
A combination of Dijon mustard and sweet BBQ sauce coats the inside layers, cutting through the heavy cheese and bacon while adding a subtle bite that works surprisingly well with the sweet maple notes and crunchy onion rings.
