When I first moved to Brisbane, Phat Boy sat right at the top of my restaurant list. Getting invited back to showcase the spot was a special moment, taking me straight up to Level 2 at Brisbane Quarter, tucked directly under W Brisbane on George Street. Stepping inside, the dining room greets you with vibrant energy, featuring a brightly painted indoor tuk-tuk, woven light fixtures hanging overhead, and a glowing green neon sign on the wall.

The kitchen brings together traditional Thai street-food flavours with a modern sit-down setting, making it an easy choice for casual weekday lunches, after-work drinks, or big communal group dinners. While the menu spans familiar noodle dishes and fragrant stir-fries, the hands-on starting dishes give the meal an immediate, interactive spark as soon as drinks arrive.

Rolling Up the DIY Pulled Pork Roti

If there is one absolute non-negotiable dish to start your feast at Phat Boy, it is the DIY pulled pork roti ($19.90). The pork is slow-cooked overnight until tender, arriving at the table alongside warm flatbread, crisp lettuce leaves, pickled vegetables, and crushed peanuts. You tear off a piece of roti, pile on the fragrant pulled pork, layer your toppings, and wrap it all up for a rich, satisfying bite.

To keep the communal sharing going across the table, the mix entree ($19) presents a stacked selection on a two-tiered bamboo stand. The platter brings satay chicken skewers with dipping sauce, golden curry puffs, crispy spring rolls, and san choy bao lettuce cups. Lifting a satay skewer or dipping a crispy spring roll sets a relaxed, fun pace for the rest of the meal.

Wok Classics and Crispy Pork Belly

Moving onto mains, ordering big is part of the experience. The crispy pork with Asian greens ($19.90) delivers a satisfying crunch from the pork belly alongside stir-fried greens that balance the richness. For gentle heat and crunch, the Thai chicken cashew ($17.90) combines tender stir-fried chicken with fresh vegetables, roasted cashews, and a side of fluffy white rice.

No casual Thai feast is complete without noodles, and the Pad Thai chicken ($17.90) delivers flat rice noodles tossed with bean sprouts and sweet-savoury stir-fry sauce. Pairing your mains with a side of coconut and pandan rice ($4.50) gives you the perfect base to mop up every bit of sauce left on the plates.

Standout Tapioca Pudding and Tropical Sweets

Even after a generous spread of savoury dishes and colourful drinks like The Passion cocktail ($19) or a cold Virgin Piña Colada ($15), saving room for dessert is mandatory. The absolute standout dish of the visit was the tapioca pudding with lychee ($10.90). Tinted a vivid green with pandan, every spoon combines chewy tapioca pearls, sweet lychee pieces, and a scoop of cold coconut ice cream for a memorable contrast.

For an equally delightful sweet finish, the roasted coconut ice cream ($16.90) arrives served inside a whole young coconut shell. Topped with a pineapple slice and a mini paper umbrella, it lets you scoop up smooth coconut ice cream while digging into the tender young coconut flesh inside.
