Truffle bao buns were not what I expected to find behind the doors of a private business club. That surprise became the theme of this WA truffle dinner at The Brisbane Club, where Chef Matt and the kitchen team pushed well beyond the traditional image of club dining.

WA Truffles is a regular highlight on my dining calendar, but this dinner felt different. The truffle bao was playful, carefully balanced and memorable enough to change the direction of the whole evening.
The bespoke mocktails were equally considered. They were not a consolation for skipping wine, but proper pairings that added another layer to the menu.
