Out of the full banquet lineup, the sticky lamb ribs and the crispy eggplant easily stole the show for me. The lamb ribs come coated in a dark black vinegar caramel glaze with sliced red chillies and spring onion scattered over the top. They are cooked so tenderly that I simply had to drop the chopsticks and use my fingers to pull the tender meat apart.
The fried eggplant arrives coated in a savoury sauce with a generous dusting of sesame seeds and scallions. Pulling a piece apart by hand shows off a delicate crispy batter shell holding soft, steaming eggplant inside, making for a remarkably satisfying dish alongside the richer ribs.
