Stepping off the pavement on George Street, the dark building exterior at number 336 led us through an entrance framed by black-and-white checkered floor tiles and a wooden staircase up to Pneuma.

Inside, exposed brick walls and warm wooden floors surrounded a long wooden table set for guests, while white-painted brickwork showcased wine bottles and dried floral arrangements.

Savoury Courses on the Short Menu

We chose the Short Chef's Menu at $85 per person. A printed paper menu displaying the Pneuma logo rested on the wooden table as drinks were poured over ice into highball glasses garnished with lemon slices.

Warm rosemary sourdough arrived with cultured miso butter, alongside heirloom beetroot paired with aged apple vinegar, garlic and almond cream, and walnut. A dark bowl held sticky koshihikari rice cake layered with soured celeriac cream, toasted buckwheat, dark petals, and seeds.

For the main course, tender wagyu beef cheek sat in a caramelised onion, green peppercorn, and bone marrow sauce inside a wide brown bowl. Beside it, a bowl of salt and vinegar baby potatoes came finished with wild honey and preserved truffle.

Finishing Every Last Spoonful

The meal concluded with two custom desserts not listed on the printed menu. Textured glass bowls held chocolate mousse topped with cherries, cream, crunchy chocolate crackles, and a dusting of chocolate powder.

A second dessert paired gelato inside a speckled ceramic bowl with dried raspberry, wild honey fudge, and nutty sprinkles. The flavours came together so well that scraping every last trace of sauce from the ceramic bowl felt like the only proper response.
