The heart of the meal centers on quality cuts cooked over genuine embers, headlined by rich MB8-9+ Wagyu beef with deep marbling. Slices go straight onto the grill grate, searing over open flame as smoke rises to yield tender, melt-in-your-mouth beef moments.
Slabs of pork belly cook right alongside the beef, crisping over red-hot charcoal before being snipped into bite-sized pieces with kitchen scissors. Wrapped into ssam with fresh lettuce leaves and sauce, it delivers classic Korean BBQ flavour.
Fifteen Daily Banchan and Comforting Sides
The anchor of the chef's signature experience is the spread of 15 distinct banchan side dishes, prepared fresh in-house daily. Small dishes of kimchi, japchae, and vibrant salads crowd the table, offering crisp texture and acidity to balance the rich grilled meats.
The surrounding spread brings even more variety to the table. A tin of corn cheese simmers on the grill grate until stringy and molten, while bubbling red tofu soup, beef yukhoe tartare topped with egg yolk and pear, and chilled naengmyeon noodles complete the feast.
