We sat down at Stilts expecting the Brisbane River view to be the main topic of conversation, but a Lion's Mane mushroom dish completely stole the lunch. Set right on the water in Brisbane City, the dining room makes an immediate impression before the first plate arrives. Yet the dish that dominated our afternoon was the Lion's Mane mushroom, proving incredibly rich, hearty and full of flavour.

Warm Brioche and Waterfront Starters

Our meal opened with warm Stilts brioche, pulled apart at the table and spread with cultured butter and tomato butter. Sipping a lychee cocktail by the window looking out over the water set a relaxed, effortless pace. Behind us, the interior was anchored by a glass wine cellar, keeping the dining room polished yet welcoming.

We followed the brioche with Wagyu tartare, served with seed crackers and a rich egg yolk. The crackers added a clean crunch to the smooth beef, offering a crisp, balanced starter.

The Surprising Lion's Mane and Searing Mains

The Lion's Mane mushroom was the indisputable standout of the meal. Plated with house-made gnocchi, a dashi broth, hazelnut gremolata and cauliflower purée, the dish brought a deep savoury richness and comforting texture that made it the biggest surprise of the day.

We paired it with the 180g MB3+ Pinnacle Pure Angus tenderloin, drizzled with Stilts red wine jus poured over the sliced steak. On the side, a charred cabbage half topped with miso, honey butter and cashews added a smoky, nutty depth to the main course.
